Course Description: Welcome to Food and Nutrition I. This course is an introduction to food and nutrition where students will study the principles of nutrition and maintaining a healthy life style. We will also focus on selection and preparation of food and personal health and well-being.
Class Objectives:

Student Responsibilities: Students are expected to come to class on time and be prepared to work. Attendance is very important because the majority of assignments will be completed during class discussions and kitchen labs. Students should bring pen/pencil and paper to class each day; I will not supply them. Only blue or black ink or regular lead pencil should be used for class work. Each person is responsible for keeping track of his/her own work. The majority of kitchen equipment and supplies will be provided at the school for the students to use. Students are expected to be responsible and follow safety procedures when using kitchen equipment.
Daily Class Work: Students will spend part of their time learning about food and nutrition, and part of their time applying what they learned in kitchen labs. We will not spend the entire time cooking every day. It is important that students take classroom instruction time seriously because we will be preparing to take a state test at the end of the semester.
State Test: A comprehensive test will be given by the state at the end of this course. It is a multiple-choice test that will be corrected by the state and the scores returned to the teacher. It is very important that students are present the day the state test is given because there is only a 5-day period that students are allowed to take the test. Students who miss this test will not be able to make it up. Students will be notified as soon as the test date is scheduled. It is the student’s responsibility to notify the teacher before the test is given if he/she will be absent the day of the test. This test is worth 100 points.
Cooking Labs: Cooking labs are a privilege. Students or classes who do not follow instructions or do not participate in classroom instruction will not be allowed to cook. Students will be responsible for assigned jobs that need to be completed and checked off before they leave class. Groups that do not complete these jobs will loose points from their cooking lab score and may loose cooking privileges. The teacher must check off students before they are excused from class. Tardy notes will not be given to students who do not finish cooking labs on time.
Participation Points: Because the majority of work will be completed during class, students will earn participation points every day. If students are absent they may make up participation points by completing an alternate assignment given by the teacher. It is the student’s responsibility to contact the teacher after an absence to receive makeup work for participation points. Participation makeup work must be completed and turned in within 1 week after a student returns from an absence. Students will receive 10 points each day of class for participation. Participation points may be taken away if students are tardy, unprepared, or breaking class rules.
Academic Grades: Students will receive a letter grade determined by a point scale based on the following areas: · Class assignments · Notebook to be kept all semester · Kitchen labs · Kitchen clean up · Tests/quizzes · Participation
The following grade scale will be used to determine grades. A = 93 B = 81 C = 67 D = 54 A- = 89 B- = 77 C- = 62 D- = 50 B+ = 85 C+ = 72 D+ = 58 F = 49 and below
Citizenship Grades: A citizenship grade will be given along with a letter grade. Citizenship is based on attendance and tardies, preparation, participation, and attitude in class. The school policy will be followed for unexcused absences. Unexcused absences will lower a student’s citizenship grade. Excessive absences and tardies will also lower citizenship grades. Any student who cheats on assignments will receive a 0 in citizenship and will not receive points for the assignment. Students can earn the following citizenship grades: · 4 – Honor · 3 – Good · 2 – Satisfactory · 1 – Poor · 0 – Failure
Missed Work: · Assignments should be turned in at the beginning of class the day they are due. Assignments that are received late will be accepted for 50% for one week only after the due date. Assignments turned in after one week late will not be accepted for points. · It is the students’ responsibility to contact the teacher to make up any missed work. · Students with excused absences will be given one week to complete assignments missed starting the day that they return to class. · Students will be allowed to make up cooking labs at home. The student will need to cook the lab assignment recipe, clean up, bring a small sample of the food item, and have a signed note from a parent or guardian stating the student completed the assignment on their own and cleaned up after. · Quizzes may be given at random, and cannot be made up if the student is tardy. · Students will have the opportunity to earn extra credit occasionally. Students can earn a MAX of 50 points extra credit each quarter.
Tardy Policy: Students must be in their assigned seat when the bell rings or he/she will be marked tardy. Students with an unexcused tardy will loose half of their participation points for the day. Students must stay in their assigned seat at the end of class until they are excused. Students are excused by the teacher, not the bell. Students are expected to stay in their assigned seat during class instruction and will be marked tardy or loose participation points if they move seats without permission. The school tardy policy will be followed. Excessive tardies will lower a student’s citizenship grade. The following is the school’s tardy policy: · 1st tardy Teacher warning · 2nd tardy Teacher warning · 3rd tardy Student’s citizenship grade will be reduced to a “2” · 4th tardy Teacher calls parent. Citizenship grade will be reduced to a “1”. Student will be referred to administration for an after school detention. · 5th tardy Teacher calls parent. Citizenship grade is a “0”. Student will be referred to administration for on after school detention. · 6th tardy Student will be referred to administration for possible one day suspension, parent conference, in-school suspension, or community service.
Hall Passes: Any student who leaves class for any reason without permission from the teacher will be marked as truant and referred to the assistant principal. Students will also loose their participation points for the day. Each student has been given a student planner that will be used to issue hall passes. It is school policy that students must have a planner to use a hall pass. Students must have their own student planner in order to use a hall pass. Students will be allowed two hall passes each quarter. If students have used both hall passes and need to use another, they may give up their participation points for the day to earn another hall pass. Students who need to use a hall pass and do not have their planner will also loose participation points. No hall passes will be allowed during cooking labs.

½ pound hamburger ¼ onion, chopped 1 cup chili beans ½ cup black beans ½ cup frozen corn 2 Tbsp taco seasoning 1 (8 oz) can tomato sauce 1 - 2 cups water * will depend on the consistency you want
Brown hamburger in a large saucepan over medium-high heat until it is no longer pink. Add chopped onion and cook until soft. Add chili beans, black beans, frozen corn, taco seasoning, and tomato sauce until combined. Add water until it is the consistency you like. Simmer soup for about 5-10 minutes. Serve with frito chips, cheese, sour cream, etc.
